The best type of pumpkin pie is kahlua pumpkin pie. Here's my recipe, which I essentially ripped off of recipezaar and tweaked to perfection because, well, the original didn't involve enough kahlua worship:
INGREDIENTS:
2 empty pie shells (deep or regular)
1 cup evaporated milk
1/2 cup brown sugar
1/3 cup kahlua
1/4 cup light corn syrup
1 1/2 teaspoons pumpkin pie spice
1 can of pumpkin pie filling
2 eggs
INSTRUCTIONS:
preheat the oven to 450 fahrenheit, then throw in the pie shells for 8 minutes while you mix everything else. make a brown cow cuz well, the kahlua's right there!
so, beat the eggs. then add the pumpkin, then add the rest of the ingredients until it looks like pumpkin pie soup. drink some brown cow. once the 8 minutes is over, bring out the pie shells and fill'em up! finish off the brown cow and make another. bring the oven temperature down to 325, put the pies back in, and bake for 40-45 minutes. chug back a few more brown cows, or other alcoholic beverage of your choice. cool. serve with whipped cream or vanilla ice cream. or with more brown cow or alcohol if you can manage. that's it! so simple, so good, and you get your essential pumpkin pie and alcohol fix for the day. that's right, day.. who said 2 pies and alcohol every day was bad for you? shhh, now eat my pretties, eat...
